Makes: 1 medium loaf

Prep Time: 10 mins

Cooking Time: 30 mins

soda bread

INGREDIENTS

  • 350 – 400g plain white all-purpose flour
  • 1½ tsp salt
  • 1 tsp bicarbonate of soda (not baking powder)
  • 285 milk + 1 Tbsp lemon juice (you can also use white wine vinegar, or apple cider vinegar)

NOTE: You can substitute the milk and lemon juice/vinegar for buttermilk

METHOD

  1. Preheat the oven to 180c, 160c for a fan oven, or gas mark 4 for a gas oven
  • Dust a baking tray with some plain flour
  • Add all the dry ingredients to a large bowl and combine
  • Poor in the milk and lemon juice or vinegar (or the buttermilk if using)
  • Stir all the ingredients until they form a dough, then shape into a ball
  • Place the dough on to the pre-dusted baking tray and cut a large, deep cross across the centre of the dough – this is important as it helps the bread to cook evenly
  • Lightly dust the top of the dough with flour and bake for 30 minutes
  • Check if the bread is fully baked by tapping the bottom of the loaf; if it sounds hollow the bread is done

Coxy’s Kitchen Tip:

This is a sticky mixture; flouring your hands before you begin to shape the dough will make the dough easier to handle. If necessary, add a bit more flour to the mixture to make it a less sticky
