Galáxia Skyfood: Fine Dining Above Funchal

There are restaurants where the view is an attractive backdrop and then there are restaurants where it becomes part of the meal itself. At Galáxia Skyfood, looking out over Funchal as the sun sets, is just another magical element and the cherry on top of an already outstanding restaurant experience! This connection matters because Madeira is not simply where Galáxia happens to be located. It is the foundation of its identity.

Savoy Signature is a proud devotee to Maderia Island and the restaurant’s elevated setting suggests escape, yet the food draws you back down to the island. To its farms, its seasons and its culinary traditions. The result is fine dining with zero pretentiousness. Its polished and imaginative but still grounded in somewhere real. For me, this is what makes Galáxia so compelling. It offers the sense of occasion expected from a destination restaurant at a luxury 5-star hotel, all the while remaining warm, expressive and deeply connected to the island.

Chef Roberto Barros describes Galáxia ‘as a symbol of Madeira’s gastronomy’. He (and the whole culinary team) respect its traditions which he has helped to beautifully blend into this concept of fine dining, bringing all the islands best known flavours, from parts of an islander’s daily life and fond memories, including his own.

From the farm to Funchal

Much of that magic begins with produce grown on Savoy Signature’s own farm – Meia Légua. The relationship between farm and kitchen gives each chef access to ingredients with an immediacy that cannot be replicated through a conventional supply chain. Seasonal produce can be followed from the soil to the restaurant, bringing freshness to each plate. Whilst visiting the farm myself and seeing an abundance of lettuce, fruits, sugar canes and endless vegetables, it felt like a tropical supermarket! When we buy our vegetables here in the UK, most have been exported and come wrapped in plastic. Seeing Chef Renalto digging up his own lettuce to use later that day was special. He was in his element!

During a guided tour of the farm, seeing the development of the land first hand was incredible, and we were talked through some of the ideas and progress plans which the Savoy Signature group are considering for the future. This will no doubt further enrich each restaurant within the Savoy family and ensure they maintain their strong sustainability ethic.

Given their exceptional service and commitment to quality and sustainability, it is fitting that two of the island’s most luxurious hotels under the Savoy umbrella – The Reserve and Savoy Palace, have retained their distinctions in the 2026 MICHELIN Guide hotel selection, earning two MICHELIN Keys and one MICHELIN Key, respectively.

The new tasting menu

“The goal is for you to travel around the island without leaving the restaurant.”

I was delighted to step foot above the clouds, (well nearly), and sit down to try the new tasting menu – Rings of Saturn. Familiar combinations have been refined and textures reconsidered. When interviewing Roberto, it was clear that his own personal experiences played a major part in dish development here. The most precious is Chef’s tribute to his grandfather from Campanário which has really inspired the “blend of history and bringing in something that’s more humble” to turn it into a fine dining concept. Galáxia’s approach appears to understand that innovation is most powerful when it begins with respect.

Course by course, the kitchen showcases dishes from different places across the island as well as incorporating all aspects from garden produce and aromatic herbs to the cool waters of the Atlantic.

To kick start your meal, the first dish is Limpet Tart with Swordfish Roe, Parsley, Bolo do caco (traditional Madeiran bread) and Skipjack Tuna prepared in two ways with Garlic. These amuse bouche set the tone for the evening. Rings of Saturn Menu is a 7-course experience which acts like a tour across Madeira’s varied landscapes and sea. I won’t spoil it too much especially as the menu evolves with the seasons but the Wagyu Beef with corn, truffle, fermented garlic butter, bay leaf and Oxtail jus is a masterpiece! It’s a richer and refined version of the traditional beef skewer which is usually threaded onto aromatic laurel wood branches instead of metal skewers and infuses the meat with a distinct herbal aroma, usually grilled over hot charcoal or wood. The Wagyu takes this simple idea to a whole new level!

And as if it couldn’t get any better, thoughtful wine pairings help to elevate even more of the senses. The chef and sommelier work closely to build a pairing menu, and sometimes ingredients are removed or altered in a dish solely to protect and match the flavour profile of the wine. Wine pairings should illuminate rather than overwhelm. No dish ever makes it to the final menu without unified approval.

The Development Process

Galáxia a symbol of Madeira's gastronomy

The kitchen is already pushing boundaries with a focus on local heritage, but this doesn’t stop the team, with experiments still going on behind the scenes. This process of intense experimentation is as unpredictable as it is exciting. Some ideas result in instant breakthroughs, while others fall flat and demand a complete restart! The true thrill lies in this trial and error, where the culinary team works in complete camaraderie to test the limits of what is possible.

Whilst speaking with Chef Roberto, I asked if he was currently working on anything in particular and as its “the season of the chestnut here in Madeira”, he wants to bring back the local chestnut, sourced from the small mountain village of Curral das Freiras. It’s a highly versatile element that fluidly bridges fish, meats and desserts. Most of us just know Autumn is the season for roasted chestnuts but here at Galáxia, they are already using this simple ingredient in a wonderful chestnut jam which is available with the cheese trolly.

The Ultimate Taste of Madeira

By seamlessly combining local gastronomy and the flavours of daily life into an elevated fine dining concept, Galáxia takes full responsibility for their guests’ relationship with the island. Whether it is a contemporary twist on a coastal fish tartar or the deeply emotional, humble history woven into the grandfather inspired grilled fish, every plate balances their ancestry with modern culinary technique. This detailed devotion to the islands soul ensures that the true flavours of Madeira are put on our radar, leaving a lasting impression that lingers long after the final course.

I am the biggest fan of concepts such as this! It makes fine dining feel personal rather than formal and offers a taste of Madeira that you’ll remember long after the evening itself.
