Smoked Sausage and Five Bean Stew from Simple Tasty Healthy by PW
This is a very simple one pot wonder. It’s a good family meal or something made quickly when you get home from work and will keep in the fridge for a few days.
Serves 4
Ingredients:
- 440g five bean salad tin (rinse under cold water)
- 440g of smoked sausage (sliced)
- 4 large potatoes (peeled, rinsed and cut into chunks)
- 2 large sweet potato (peeled, rinsed and cut into chunks)
- 2 large onions (peeled and diced)
- 4 carrots (peeled and diced)
- 4 sticks of celery (rinsed and diced)
- 2 cloves of garlic (crushed)
- 1/2 teaspoon of smoked paprika
- 1 teaspoon of dried thyme
- 1 teaspoon of cumin
- 1 teaspoon of dried rosemary
- 2 tablespoons of tomato puree
- 2 beef stock cubes
- 4 pints of water
- Fresh flat leaf parsley chopped for garnish
Method
- First of all, get a large deep pan and add a drizzle of olive oil.
- Add the sliced sausage along with the onions, celery and carrot and fry for a few minutes.
- Add the garlic and spices and fry for a few more minutes.
- Add both the potatoes and tomato puree and mix well before adding the beef stock and water, bring to the boil
- Add the washed and rinsed five bean salad and simmer until vegetables are soft.
- Check seasoning
- Garnish with the parsley and serve with crusty bread
Chefs Tip: add a little Worcestershire Sauce at the last minute for a depth of flavour and colour and season with salt and pepper.
