Seared Sirloin Steak with Mediterranean Style Vegetables, Fusilli Pasta and Picked Basil
This is a very elegant Sirloin Steak dish and looks beautiful and will definitely impress anyone at your dinner table and yet so simple.
Serves x 2
INGREDIENTS
2 sirloin steaks
4 cherry tomatoes (cut in half)
1 courgette (cut down the middle length ways and sliced)
2 red onions (sliced)
1 red pepper (sliced)
1 green pepper (sliced)
4 handfuls of fusilli pasta
1 clove of garlic (crushed)
1 sprig of fresh thyme
4 tablespoons of olive oil
1\2 bunch of fresh basil
Salt and pepper


METHOD
Firstly, you will need two medium sized frying pans and a medium saucepan for the pasta. Bring two pints of water to the boil and add the pasta – cook for 12 minutes and strain.
While the pasta is cooking, add two tablespoons of olive oil into each pan add the steak in one and season with the salt and pepper. In the other pan add the red onion and garlic and fresh thyme and cook for a few minutes before adding the courgette and peppers. Cook for a further few minutes.
Check on the steak and cook to you’re liking.


Meanwhile mix the pasta along with the vegetables and season with salt and pepper. Add the basil and mix well before removing the steak from the pan. Allow the steak to rest for a few minutes and slice to thickness required.
Add pasta and vegetables to a large bowl or plate in the centre and arrange the steak around. Drizzle with olive oil.
