Galáxia Skyfood Unveils a New Expression of Madeira’s Contemporary Gastronomy

At Savoy Palace, Madeira-born Chef Roberto Barros introduces a renewed dining experience inspired by the island’s landscape, local ingredients, seasonality and Portuguese craftsmanship.

High above Funchal, overlooking the Atlantic Ocean, Galáxia Skyfood is entering a new chapter – one that reflects both the restaurant’s evolution and the growing confidence of Madeira’s contemporary culinary scene.

Led by Madeira-born Chef Roberto Barros, the restaurant has embraced a renewed vision centred on the island itself. Local ingredients, seasonal produce, the restaurant’s own kitchen garden and Portuguese craftsmanship now come together to shape a dining experience that is both deeply rooted in Madeira and unmistakably contemporary.

Rather than recreating traditional recipes, Roberto Barros looks to the island’s flavours, memories and landscapes as a starting point for a more personal culinary language. Throughout the menus, Atlantic fish and seafood, regional fruits, vegetables, herbs and locally sourced ingredients are reinterpreted with precision and creativity, while familiar Madeiran products including black scabbardfish, limpets, bolo do caco, skipjack tuna, Madeira wine and poncha appear in unexpected ways.

Seasonality plays a defining role in the kitchen’s philosophy. The menus evolve naturally throughout the year, responding to the rhythm of the island and the availability of local produce. This relationship with the land extends beyond local sourcing. Herbs, edible flowers and seasonal produce harvested from Savoy Signature’s farm are incorporated throughout the menus, reinforcing the restaurant’s commitment to freshness, seasonality and a genuine sense of place.

The restaurant’s renewed culinary identity is expressed through three tasting experiences

 — Around the Sun, Rings of Saturn and the entirely plant-based Living Matter — each offering a different perspective on Madeira’s produce while sharing the same commitment to flavour, authenticity and technical precision. An à la carte menu complements the tasting journeys, allowing guests to explore the restaurant in a more flexible way.

This new chapter extends beyond the kitchen.

Developed exclusively for Galáxia Skyfood, a bespoke collection of handcrafted ceramics by Portuguese design studio Studio Neves has become an integral part of the dining experience. Inspired by the restaurant’s celestial identity, the pieces combine organic forms and mineral textures with subtle references to natural cycles, creating a dialogue between cuisine, design and craftsmanship. Rather than simply presenting the food, every piece has been conceived to become part of the story told at the table.

The evolution is equally reflected in the restaurant’s atmosphere, with a more fluid and engaging style of service that preserves the refinement of fine dining while creating a warmer and more natural relationship between guests and the team.

Beyond its daily menus, Galáxia Skyfood continues to strengthen its role within Portugal’s gastronomic landscape through Estrelas no Galáxia, the restaurant’s collaborative dining series bringing Michelin-starred chefs from across the country to Madeira. Conceived as a platform for dialogue, creativity and shared learning, the initiative reflects the same philosophy that guides the restaurant today: an openness to new ideas while remaining firmly connected to its roots.
