The Black Swan (Oldstead) is excited to offer nationwide customers a taste of Oldstead this Christmas and New Year

Tommy Banks, world renowned chef behind Michelin-starred The Black Swan (Oldstead) and Roots (York) , is excited to offer nationwide customers a taste of Oldstead this Christmas and New Year. Having launched delivery service Made in Oldstead during lockdown, the third arm to the Banks’ family business has continued to deliver premium food boxes to customers across the country since April. Now, the team is preparing a collection of festive menus, gift boxes and products for December, helping to make what is likely to be a very different festive period this year that bit more special.

Available to pre-order online now, the boxes and menus make use of the produce from the Banks’ farm and kitchen garden in Oldstead, and shine a light on Tommy’s creative culinary ethos, championing his Yorkshire roots and the beauty of British produce. As with all of Tommy’s cooking, the boxes showcase ingredients that have been foraged or grown in and around Oldstead and products from his favourite local suppliers:

1) Provisions Box (£195) – delivery 23rd December

Chicken Liver Parfait is served alongside Mulled Wine Jelly while a Gherkin Ketchup has been prepared to accompany your Oak-Smoked Salmon . A Black Garlic Glazed Gammon is included in addition to show stopping preserves such as the Onion & Chicory Root Chutney and the Oldstead Apple Jelly . A Honey and Oat Loaf , Kernel Marzipan Christmas Cake , Chicory and Lovage Fudge and Root Vegetable Mince Pies will satisfy any sweet tooth in sight.

2) Christmas Dinner Box (£160) – collection from Roots York 24th December

Tommy’s Christmas lunch for two begins with bread and the team’s renowned Hafod Cheddar Custard , followed by a starter of Oak-Smoked Salmon, Whipped Buttermilk and Pickled Farm-Grown Fennel. For main, it’s a succulent, Stuffed Turkey Ballotine , served with Pigs in Blankets, Yorkshire Puddings, Brassica Cheese, Braised Red Cabbage, Pommes Anna, Turkey Gravy and Sourdough Bread Sauce . For dessert, Tommy’s special Chocolate Fondants with Brandy Cream , and, of course, some Root Vegetable Mince Pies .

3) New Year’s Eve Celebration Box (£160) – delivery 30th December

A night in celebrating spent well with a specially curated 5-course menu from Tommy. Bread and Hafod Cheddar Custard is followed by Tommy’s signature dish as a starter: Beetroot cooked in Beef Fat , with Smoked Cod’s Roe, Goat’s Curd and Seed Crackers . For main it’s Salt-aged Beef Wellington, served with Pommes Anna, Braised Red Cabbage and a rich Red Wine Jus . Pre dessert is a tangy Lemon Posset using the team’s own garden-grown lemon verbena before a dessert of Tommy’s special Chocolate Fondants with Brandy Cream . A bottle of Limited-Edition Black Swan Sparkling Wine , Black Swan Blend Coffee and Chocolate and Rye Cookies are also included.

4) Oldstead Gift Box (£95) – delivery 8-12th December

A special festive gift box filled with some of Tommy and teams’ favourites. Exclusive preserves using produce from the farm such as Fig, Date and Apple Chutney, Oldstead Garden Herb Oil and Smoked Crapaudine Beetroot Ketchup are delivered alongside the Roots cookbook, the Black Swan’s exclusively produced sparkling wine and coffee and a Made in Oldstead linen tea towel. Customers ordering from Made in Oldstead can add to their order with The Black Swan’s pre-bottled 500ml restaurant cocktails. The latest flavours are suitably festive, with the Spiced Rum ‘Old Fashioned’ , the Bramble ‘Negroni’ and Blackcurrant Leaf Martin i available individually (from £39) or as a set (£124 for 3).
