Christmas Breakfast: a Very Important Meal

Christmas is a time when it is very easy to overindulge and pile on the pounds, but not if you plan carefully and eat consciously.

Start Christmas Day with the perfect Christmas breakfast of Turmeric Scrambled Eggs with Sourdough and you will not be tempted to snack before your Christmas dinner.

Prep time – 5 minutes

Cooking time – 5-8 minutes

Serves – 1 person

Ingredients:

  1. The Groovy Food Company Organic Rapeseed Oil Spray
  2. ½ Garlic clove, finely chopped
  3. 100g Spinach leaves
  4. 4 large Eggs
  5. 50ml Milk
  6. 2 tsp grated Turmeric
  7. 2 slices Sourdough bread, toasted
  8. Salt
  9. Pepper

Method:

Liberally spray the oil over the surface of your non-stick pan, place over a medium heat.

Lightly fry the garlic, add the spinach leaves and wilt for a few mins – add a splash of water if they stick.

In a bowl, whisk the eggs with the milk and turmeric. Season well.

Add to the pan with the spinach and stir continuously for 5-8 mins until the scrambled eggs are at the desired consistency.

Serve on slices of toasted sourdough.
