Pork and rosemary potato balls from Simple Tasty Healthy by PW
Delicious as a snack with some dipping sauces, these stuffed potato balls with pork and rosemary are delicious as a mid week main meal served with a spiced tomato sauce.

Indredients
- 250g lean minced pork
- 400g waxy potato (I used Maris Piper)
- 1 clove of garlic crushed
- 1 egg beaten
- 2 tablespoon of plain flour
- 4 sprigs of rosemary (picked)
- 2 tablespoon of butter
- 1 tablespoon of canola
Method
- Boil or steam the potato until soft. If boiling strain through a colonder untill all the water has evaporated
- Mash well with salt and pepper and a little butter allow to cool once cool add flour and mix well.
- Mix the pork with garlic and some of the rosemary and a beaten egg
- Once the potato has cooled place a little flour in a bowl this will help firm up and shape up
- Place a little potato in your palm of your hand place a little of the pork mix then more potato with a little flour shape into balls once complete
- Allow to rest in the fridge a hour before cooking
- Fry in a pan with a little oil and butter
- Add remaining rosemary and cook until golden
