The Cheesy Charleville Omelette Breakfast Recipe

The cheesy Charleville Omelette with chorizo, baby spinach, tomato, red onion, red pepper, cherry tomato, Charleville grated cheese and Charleville red cheddar and picked sage.

INGEDIENTS

3 eggs {beaten}

1/4 red onion {sliced finely}

1/2 ring of chorizo sausage {peeled and sliced}

4 cherry tomatoes

100g charleville grated cheese

100g charleville lighter red cheddar

picked sage

spinach

knob of butter 

salt and pepper

METHOD

Preheat the oven to 180. Warm a medium size pan on the heat and add the knob of butter. Once the butter has foamed add the chorizo and onion and cook for a few minutes. Next add the beaten egg and mix well through the pan to prevent scrambled eggs. The tomatoes and baby spinach are added next, followed by the cheeses.

Cook in the oven for a few minutes until the cheese has melted and serve immediately.
