Pork and rosemary potato balls

Pork and rosemary potato balls from Simple Tasty Healthy by PW

Delicious as a snack with some dipping sauces, these stuffed potato balls with pork and rosemary are delicious as a mid week main meal served with a spiced tomato sauce.

Potato croquettes stuffed with pork


  • 250g lean minced pork
  • 400g waxy potato (I used Maris Piper)
  • 1 clove of garlic crushed
  • 1 egg beaten
  • 2 tablespoon of plain flour
  • 4 sprigs of rosemary (picked)
  • 2 tablespoon of butter
  • 1 tablespoon of canola


  1. Boil or steam the potato until soft. If boiling strain through a colonder untill all the water has evaporated
  2. Mash well with salt and pepper and a little butter allow to cool once cool add flour and mix well.
  3. Mix the pork with garlic and some of the rosemary and a beaten egg
  4. Once the potato has cooled  place a little flour in a bowl this will help firm up and shape up
  5. Place a little potato in your palm of your hand place a little of the pork mix then more potato with a little flour shape into balls once complete
  6. Allow to rest in the fridge a hour before cooking
  7. Fry in a pan with a little oil and butter
  8. Add remaining rosemary and cook until golden
