An Indulgent Firecracker Prawn with a Vegetable Chow Mien

An Indulgent Firecracker Prawn with a Vegetable Chow Mien and a light soy, sesame oil dressing and a red pepper powder and picked coriander.

Serves x2

Ingredients:

400g Prawns (peeled and shelled)

2 Cups of Fine Breadcrumbs

½ Teaspoon of Chilli Powder

½ Teaspoon of Cajun Spice 

½ Teaspoon of Smoked Paprika 

Pinch of Salt and Pepper 

2 Cups of Self Raising Flour 

2 Eggs (beaten)

2 Carrots (peeled and cut into strips)

2 Red Onions (peeled and sliced)

I Red Pepper (sliced) 

1 Green Pepper (sliced)

2 Red Chilli (sliced)

1 Clove of Garlic (crushed)

200g Noodles

Drizzle of Rapeseed Oil

Sprinkle of Red Pepper Powder (available in all good supermarkets) 

Method:

First, bring a medium size cooking pot or pan with 500ml of water to the boil and cook the noodles.  Whilst the water is coming to the boil prepare the prawns.

Add the flour beaten egg and breadcrumbs to three large bowls. Dip the prawns into the flour, the egg, then the breadcrumb mix. Place onto a plate and allow to rest for a few minutes in the refrigerator.

The noodles will be cooked so strain and rinse under cold water until cooled down.

In a large frying pan add a drizzle of rapeseed oil, add vegetables and cook for a few minutes before adding the chilli and garlic mix. Add noodles then soy sauce and sesame oil, mix well and allow to rest at the side of the cooker to keep warm.

In another pan add a little rapeseed oil and fry the prawn for 3 minutes each side. To serve place noodles and vegetables in the centre of a plate or large bowl, place prawns on top sprinkle red pepper powder and picked coriander.

And there you have your delicious Firecracker Prawn with a Vegetable Chow Mien and a light soy, sesame oil dressing and a red pepper powder and picked coriander.
