Sitting five metres below the ocean, Under is the world’s largest underwater restaurant. The unique restaurant is in Norway, close to the town of Lindesnes in the country’s southern tip. Under offers diners the chance to marvel at the seabed through panoramic windows while indulging in delectable dishes. The restaurant opened in March 2019 and was designed by Snøhetta, the same Norwegian architecture firm behind the Museum Pavilion of the September 11 Memorial Museum in New York. With enough space to accommodate up to a hundred guests in a 500 square metre area, Under is the largest of its kind.

Under is housed in a monolithic structure with concrete walls about one metre thick. The building rests on the sea, built to withstand pressure and shock from the sea. It resembles an oblong box jutting out the sea at a 45-degree angle. Inside, diners will descend a staircase to a stylish room with oversized windows, giving diners a preview of the sea life. The restaurant offers a fixed tasting menu that changes according to the seasons. Diners can pay up to $400 if wine pairings are included.

Acclaimed Danish chef Nicolai Ellitsgaard Pedersen is behind the restaurant menu. To keep up with the ocean theme, most dishes are fish-based, but there are also wild seabirds and local lamb. Chef Nicolai has extensive experience working in some of Scandinavia’s best restaurants. He had adopted the Nordic mindset that although presentation and creativity are essential, quality ingredients are what matter the most.

Due to the rich biodiversity in the ocean, they designed the building to integrate into the underwater environment as time goes by. That way, it can serve as an artificial reef to provide a sanctuary for marine life. The building is also used by research teams in observing fish behaviour and comes with cameras and other tools to help study marine biology.
