Brasserie Blanc Leeds: Champagne & Soufflé menu sparkles

Dazzling new venues come and go, but Raymond Blanc’s iconic Leeds Brasserie has been a seemingly eternal presence on the city’s ever-evolving dining scene for as long as I can remember. 

Perhaps the key to the restaurant’s success lies in its ability to subtly move with the times, whilst simultaneously sticking to its roots and what made it great in the first place. The humble souffle is very much part of that story. In fact, it’s been on the menu since day one, selling like hot cakes ever since. 

It only seems right that the dish is once again put into the spotlight, and that’s just what team Raymond have done with their new summer-inspired Champagne and Soufflé menu. Inspired by classic French cuisine and the quintessential English summer day, a selection of sweet flavours have been created to perfectly complement a glass of France’s favourite sparkling export. 

We settled down to enjoy the new menu on a packed, late Saturday afternoon when the atmosphere was buzzing with the air of new-found freedom that can only come after a global pandemic has turned the world upside down. 

Sipping a glass of Champers in a packed city venue never felt so good. And, then came the refreshing Apricot, Almond & Amaretto soufflé. This lighter than air soufflé features poached apricots, amaretto and marzipan and is served with an apricot coulis, apricots and vanilla ice cream. Simple but delicious. 

The Strawberries and Cream Soufflé is a much simpler affair with strawberries, vanilla ice cream and a strawberry coulis, but all the better for it and perfect for those looking for something lighter. 

We left on a promise to return for the signature Pistachio Soufflé, having enjoyed a breezy few hours drinking fine wine in one of the city’s best loved hot spots. Essential Leeds.
