Chocolate Covered Superfood Truffles with Green Boost

Ingredients
• 100g almonds
• 1 tbsp coconut flour
• 1 tsp cinnamon
• 1 tsp Bioglan Superfoods Green Boost
• 6 dried apricots
• 1 tsp maple syrup
• 1 tbsp coconut oil
• Dash of water
• 2 tbsp desiccated coconut
• 100g dark chocolate, melted
Method
1. In a blender, add the almonds and blend until fine.
2. Add coconut flour, cinnamon and Bioglan Superfoods Green Boost, blend.
3. Add apricots, honey and coconut oil, blend.
4. Add a little bit of water to get a doughy consistency.
5. Move the dough into a bowl and mix in the desiccated coconut.
6. Shape into balls and dip the balls in the melted chocolate and transfer to a plate. Sprinkle a bit of desiccated coconut onto the balls and let them sit in the fridge for 30 minutes before consuming.
7. Store in an airtight container in the fridge and use within 1 week. Can also be frozen.
