Potato and Pea Curry

Enjoy a curry night with this popular Potato and Pea Curry. With only a subtle kick from the chilli, this lightly spiced, fragrant curry is one that all your guests can enjoy.

This is a dry dish, so it works well as a side served with wet curries, or as a main course served with dhal or basmati rice. Be sure to make enough though, because this delicious vegetarian Potato and Pea Curry is sure to draw the meat-eaters in too.

Potato and Pea Curry

Recipe serves: 4

Prep time: 20 minutes

Cooking time: 20-30 minutes

INGREDIENTS:

  • 700g potatoes, peeled and cut into 1cm cubes
  • 120g peas
  • 2 medium onions, thinly sliced
  • 2 Tbsp oil, or ghee
  • 2 cloves of garlic, crushed
  • 2 tsp, fresh ginger, grated
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • ½ tsp chilli powder
  • Approx. 150ml water
  • 1½ Tbsp fresh mint, finely chopped

METHOD:

  1. On a medium heat, heat the oil or ghee in a large frying pan, then add the sliced onion, garlic and ginger and cook until the onion has softened, but not coloured
  2. Add the ground spices, chilli powder and potato to the pan and stir until all the potatoes have been well coated in the spices
  3. Add the water to the pan – the water should cover the potatoes no more than 1/3 of the way up; depending on the size of the pan, you may need to add more water. Cover the pan with a lid and simmer for 15-20 minutes until the potatoes start to become tender. Stir occasionally to make sure they don’t stick to the bottom of the pan
  4. When the potatoes are almost done, stir in the peas and check the seasoning. Cover and cook on a low heat until the potatoes have absorbed the water and are cooked through; this should take no more than 5 minutes
  5. Just before serving, stir in the mint and serve either as a main course or as a side dish to your favourite curry
