Healthy Pot-Roast Chicken with Pearl Barley by @coxys_kitchen
You can’t beat a Sunday roast, but this Healthy Pot-Roast Chicken with Pearl Barley is definitely up there and a great twist on traditional roast dinner. This Healthy Pot-Roast Chicken with Pearl Barley has it all going on: It’s budget friendly, quick to prep, super nutritious, super delicious – and with only one pot to wash up, you can’t go wrong!
Recipe serves 4 people
Prep time: 15 minutes
Cooking time: 1hr 20 mins – 2hrs, depending on the size of the chicken
Ingredients:
- 1 large whole chicken (1.5kg)
- 2 large carrots, roughly chopped
- 120g pearl barley
- 2 cloves of garlic, roughly chopped
- 700ml strong chicken stock made with 2 stock pots, or fresh chicken stock
- ½ head of hispi cabbage, shredded
- Olive oil
- 1 tsp dried parsley
- Salt and pepper to season
Method:
- Turn the oven on and preheat as high as it will go, usually between 230-250c
- Drizzle the chicken with the olive oil and season allover with salt and pepper, then place the chicken a large casserole pot and roast in the oven for about 20 min to get colour on the chicken
- Take the pot out of the oven and reduce heat to 200c. Remove the chicken from the pot and set aside
- Add all the other ingredients, except for the shredded cabbage into the pot, then rest the chicken on top and cover with a lid
- Place the pot back into the oven and cook for at least 1 hour, or until the chicken is cooked through; this will depend on the size of your chicken
- When the chicken is cooked, take the pot out of the oven, remove the chicken and leave to rest for at least 20 minutes. Make sure you replace the lid so that the barley and veg stays hot
- 15 minutes before the chicken is ready to serve, add the shredded cabbage to the casserole pot and stir into the veg and barley. Replace the lid to allow the cabbage to cook in the residual heat
- To serve, spoon the barley and veg into warmed bowls then top with the pieces of carved chicken
