Cheese Scones – Makes about 6 scones using a 6-7cm diameter circle cutter
Ingredients:
- 225g self-raising flour
- ½ tsp salt
- 50g cold butter or Lurpak
- 125g strong hard cheese such as Cheddar, Red Leicester or Parmesan (or a combination)
- 60ml cold milk
- 60ml cold water
- Some milk or an egg to milk or egg wash the scones
Method:
- Heat the oven to 220C. Sift the flour into a large mixing bowl, then add the salt and combine.
- With cold hands, break the butter up into small pieces and rub into the flour with your fingertips until it looks a bit like wet sand!
- Grate the cheese and add ¾ of it to the flour and stir into the mix.
- Create a well in the centre of the flour and cheese mix and add the milk and water. Gently mix with a spoon or your hands, but be careful not to overwork the dough. The dough is ready when everything is combined and it comes away from the bowl.
- Lightly flour your work surface and gently flatten or roll the dough so that it is no less than 2 cm wide. Cut the dough with a circle cutter (between 6-7cm diameter).
- Place the scones on a baking tray and brush with the milk or egg wash.
- Sprinkle the remaining cheese on each scone and bake for 12 – 15 minutes until golden. Leave to cool slightly and enjoy!
