Pan Fried Salmon with a Dill Cream Sauce

Here’s a delicious recipe for Pan Fried Salmon with carrot, potato and coriander pancake, baby scallops, sugar snap peas and a dill cream sauce.

Serves x2

Ingredients:

2 Salmon Fillets

8 Baby Scallops or 4 Large Scallops 

2 Handful of Sugar Snap Peas

½ Bunch of Fresh Dill

½ Glass of Dry White Wine 

½ Cup of Double Cream 

Salt and Pepper 

4 Tablespoons of Butter

The Pancake Mix:

2 Large Carrot (peeled, rinsed, grated)

2 Eggs 

2 Large Potatoes (peeled,rinsed grated). 

1 Cup of Self-Raising Flour 

1 Pint of Buttermilk 

½ Bunch of Coriander Chopped (cilantro)

Method:

First, make the pancake. Add to a large bowl the potato, carrot and eggs and whisk well. Season with salt and pepper add the flour and mix well, gradually adding the milk until a batter has formed. At this stage add the coriander (cilantro and mix well).

Heat a large frying pan to a medium heat. Add a drizzle of rapeseed oil, 1 tablespoons of butter and the required size of pancake mix, cook for a few minutes (when bubbles appear flip and cook for a few minutes more.)

Bring a saucepan of water to the boil with salt to cook the vegetables. By this stage the pancakes will be cooked.

Give the pan a wipe dry with kitchen towel and add a drizzle of rapeseed oil. Place the salmon skin side down in the pan and season with salt and pepper. Cook for four minutes, flip over and season with salt and pepper. Add sugar snaps to the boiling water and cook for a few minutes.

Add scallops to the frying pan, season with salt and pepper and cook for a few minutes on one side flip over add a tablespoon of butter and cook for a further two minutes.

Remove the salmon and scallops from the pan and place in a separate dish. To the frying pan, add the white wine and cook until reduced by half, add cream reduce by half again and season with salt and pepper. Add knob of butter mix well before adding the dill and turn off heat. 

Arrange on a large plate. Place the pancake on the plate add sugar snap peas, then place the salmon on top of the pancake and drizzle the sauce around the plate. Place the scallops on top and enjoy your Pan Fried Salmon.
