Instagram Star Milli Taylor’s Easy Omelette with a Twist Recipe

Milli Taylor, caterer, Instagram star and author of Party Perfect Bites cookbook, says of the humble omelette “for me, after the longest shift in the world, I will always come home to an omelette.

An omelette is cheap, convenient, nutritious and a great way to use up all the scraps in my fridge whether that is a little bit of onion or a random knob of cheese. Using Yondu for an addition of umami transforms the egg dish, making it deeply rich, savoury and moreish.

All you really need to make the ultimate “fast food” omelette, is a splash of Yondu, some eggs, whatever vegetables you have a good non-stick pan and you’re good to go!”

(Serves 1)

Ingredients:

omelette

3 eggs 

1 tsp Yondu vegetable umami sauce

Sprinkle of chilli flakes

Two large Tomatoes

Quarter of an onion

Knob of Cheese

Spinach

Oil or fat of choice

Method:

1. Add a slosh of oil and whilst it is heating up, dice some onion.

2. Put onion in pan to soften.

3. Slice tomatoes on the round and put in pan with onions. Reduce to a lower heat to cook the tomato juice off and keep stirring.

4. Once softened, add a handful of spinach and stir for a minute. Add a sprinkle of chilli flakes and put into a bowl to one side.

4. Crack three eggs into bowl. Whisk with fork to loosen.

5. Add a teaspoon of Yondu to the egg mixture.

6. Put a pan on high heat and add a fat of choice. Once sizzling, add the eggs.

7. Loosen the eggs around the edge and shake. Once cooked, add the vegetable mixture on top and some grated cheese to melt.

8. Tip out of pan onto plate and fold over the top.
