Now that the weather has turned, soup season is well and truly upon us. This Vietnamese Salmon Pho Noodle Soup has everything going on. There’s an abundance of fresh aromatic flavours, a gentle kick from the chilli, and warming notes provided by the cinnamon in the fragrant, comforting broth. Vietnamese Salmon Pho Noodle Soup will have the cockles warmed in no time at all.

Cooking time: 15 minutes


  • 250g flat rice noodles or glass noodles
  • 1 thumb sized piece of fresh ginger, thinly sliced
  • 2 banana shallots, finely sliced
  • 1 red chilli, finely sliced
  • 1 cinnamon stick
  • 1 lemongrass stalk, bruised
  • ½ Tbsp veg oil
  • 200ml fish or chicken stock
  • 1 Tbsp fish sauce
  • ½ Tbsp brown sugar
  • 200ml coconut milk
  • Juice of 1 lime
  • 200g skinless salmon fillet, cut into bite sized pieces
  • 2 pak choi, halved


  1. Cook the noodles according to packet instructions
  2. Heat the oil in a large wok or frying pan and gently fry the ginger, shallots, 2/3 of the red chilli, cinnamon stick and lemongrass for 1-2 minutes to release the aromats
  3. Pour in the stock and bring to a simmer, then add the fish sauce and brown sugar and stir until the sugar has dissolved
  4. Stir in the coconut milk and lime juice, then add the salmon and cook for 8 minutes, until the salmon is almost cooked. Remove and discard the lemongrass, add the pak choi and cook for 2 minutes until the leaves start to wilt
  5. To serve, divide the drained noodles between warmed bowls, then use a slotted spoon to arrange the salmon pieces and pak choi on top of the noodles. To finish, poor over the coconut sauce and sprinkle with the remaining sliced chilli
