Shakshuka Recipe – Baked Eggs in Spicy Tomato Sauce

Weekends are for fabulous brunches and this Shakshuka recipe certainly delivers on that front. This middle-eastern delight is packed full of warming spices to liven the taste buds, and the eggs bring wholesomeness, making sure you’re set up for the day ahead. If it’s a hangover you’re nursing, then this Shakshuka recipe will have you feeling pepped up in no time.

Serves 2

Prep time: 10 minutes

Cooking time: 30 minutes

INGREDIENTS:

  • 1 Tbsp olive oil
  • 1 red onion, finely chopped
  • 2 large garlic coves, crushed or finely chopped
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp cayenne pepper
  • ½ tsp paprika
  • 400g good quality tinned chopped tomatoes
  • Up to ½ tsp brown sugar
  • Salt and freshly ground pepper
  • Large handful of fresh spinach, washed and drained
  • 2-4 eggs, depending how hungry you are
  • Crusty bread for dipping

METHOD:

  1. In a medium-large frying pan, heat the oil on a medium heat, then add the onion and cook until softened. Stir in the garlic and cook for a further 2 minutes

  2. Add all four spices to the pan and stir until they start to give off a smoky aroma

  3. Add the tinned tomatoes and simmer for 10 minutes. Taste the tomato sauce and if necessary, add a pinch of sugar to bring out their sweetness. Add a bit more sugar at a time until it’s right for your palate, then season with salt and pepper to taste

  4. Add the fresh spinach and stir into the sauce until it starts to wilt. Then, using the back of a large spoon or rounded part of a ladle, make evenly spaced wells in the sauce and crack an egg into each one

  5. Cover the pan with a lid and cook for 6-8 minutes, until the clear egg whites have turned white and the yolk is cooked, but still runny. If using and ovenproof pan, you can also finish the dish in a preheated oven at 200c. Simply transfer the pan to the oven and bake uncovered for 8-12 minutes until the eggs are cooked

  6. When done, sprinkle over a touch of paprika, or cayenne pepper and enjoy with crusty bread for dipping

Coxy’s Kitchen Tips:

  1. To make individual portions transfer the finished sauce to tapas dishes, make a well in the middle and crack an egg into it. Bake in a preheated oven at 200c for 8-12 minutes

  2. Add smoked bacon or chopped ham for a non-veggie alternative
  3. Try it finished with crumbled feta over the top, or another cheese of your liking
  4. Finish with a drizzle of truffle oil over the eggs for added luxury
