If you’re often strapped for time then this Peppered Mackerel Linguine with Cherry Tomatoes and Black Olives recipe is for you. Tinned mackerel is not only good for you, but it’s good for your wallet too.

At just over £1.00 per tin they are quickly becoming a store cupboard staple. With hardly any prep, this easy Peppered Mackerel Linguine with Cherry Tomatoes and Black Olives recipe is ready in just ten minutes; perfect for busy lives.

Serves: 2

Prep time: 5 minutes

Cooking time: 10 minutes

INGREDIENTS:

  • 150g linguine
  • 2 cans of peppered mackerel in oil
  • 150g cherry tomatoes, halved
  • Approx. 20 black olives, halved lengthways
  • Basil leaves to garnish

METHOD:

  1. Fill and boil the kettle, then put the pasta on to cook
  2. While the pasta is cooking, take a large sauté or frying pan and add a teaspoon of the canned mackerel oil and heat on a medium heat. Add the cherry tomatoes and cook until they start to break down, then add the olives
  3. Just before the pasta is done, flake half the mackerel into the pan with the tomatoes and olives, then add the cooked linguine, two tablespoons of the mackerel oil and tablespoon of the pasta water
  4. Toss everything together so that the oil and pasta water emulsifies to create a light sauce
  5. Serve into warmed bowls, then flake and top with the remaining mackerel and garnish with a few baby basil leaves
