Creamy Salmon and Broccoli Rigatoni with Lemon and Chilli Recipe
Salmon and broccoli have always worked well together – add to those, rigatoni, crème fraîche, lemon and chilli and you get, Creamy Salmon and Broccoli Rigatoni with Lemon and Chilli.
This dish has a light touch of creaminess, with the soft, succulent salmon and slightly crunchy broccoli speaking for themselves. But it’s the lemon and chilli that really lift the flavours making it all the more interesting. Creamy Salmon and Broccoli Rigatoni with Lemon and Chilli is perfect for a simple midweek dinner.


Serves 4
Prep time: 5 minutes
Cooking time: 15-20 minutes
INGREDIENTS:
300g Rigatoni pasta
1Tbsp Olive oil
3 Salmon fillets
300g Tenderstem broccoli
200ml Crème fraîche
1 Lemon, juice and zest
¼ – ½ tsp dried red chilli flakes
Salt and pepper
METHOD:
- Put the pasta on to cook according to packet instructions
- On a high heat, heat a non-stick frying pan and add the olive oil. Season the salmon fillets with salt and pepper, then place the salmon skin-side down and cook for 3 minutes, then lower the heat and turn the salmon and cook for a further 3 minutes. To check if the salmon is done, gently press down; if it feels soft and the flesh is flaking, the salmon is done. Set the salmon aside to rest
- Turn the heat to low and clean out the pan with some kitchen paper. Add the crème fraîche, lemon juice, zest and chilli flakes and let simmer for a few minutes until the sauce has heated through. Adjust the flavour with more lemon or chilli flakes according to taste and season with salt and pepper
- 2-3 minutes before the pasta is done, add the tenderstem broccoli to the pasta water and cook. Drain the pasta and broccoli and stir into the sauce
- If the salmon has skin on it, remove the skin and break the salmon into large flakes, then gently fold into the sauce so that it is well coated, making sure that the flakes are still in tact
- Serve in warmed bowls, with a final grinding of black pepper and a wedge of lemon

Freeze the salmon skin and use it as garnish for other salmon dishes. Simply fry in a pan, or bake in the oven to make the skin crispy again.
