This Creamy Linguine with Flaked Salmon and Peas recipe, packed with big chunks of tasty, flaked salmon is a great healthy meal choice – quick and easy for a mid week meal in minutes. This makes a fantastic fresh dish perfect for Spring!

Recipe serves one, simply upscale to feed more people

Cooking time: 15 mins

Ingredients:

  • 75g linguine
  • 1 salmon fillet
  • 40g frozen peas
  • 2 Tbsp crème fraiche
  • Zest and juice of ½ lemon
  • Salt and pepper

Method:

  1. Bring a large pan of water to the boil and add a tablespoon of salt. Once the water has boiled, add the spaghetti and cook as per packet instructions
  2. On a high heat, heat a non-stick pan and lightly oil and season the salmon fillet with salt and pepper. When the pan is hot, place the salmon skin-side down and cook for 2-3 minutes, then lower the heat and turn the salmon and cook for a further 2-3 minutes. To check if the salmon is done, gently press down; if it feels soft and the flesh is flaking the salmon is done. Set the salmon aside to rest
  3. Add the frozen peas to the pasta and continue to cook
  4. Clean out the pan with some kitchen paper and make sure the heat is on low, then add in the crème fraiche, lemon zest and juice – add more lemon zest or juice if you think it needs it
  5. Break the salmon into large flakes (you don’t need the skin for this dish). Stir 2/3 of the flaked salmon into the sauce so that it is well coated, but make sure that the flakes are still in tact
  6. Drain the pasta and peas, but reserve a few spoonfuls of the pasta water
  7. Add the pasta to the sauce with some of the reserved water and make sure everything is well combined. Place into warmed bowls, then add the rest of the flaked salmon and finish with a final twist of black pepper

Coxy’s Kitchen Tip…

Freeze the salmon skin and use it as garnish for other salmon dishes. Simply fry in a pan, or bake in the oven to make the skin crispy again.
