Classic Beef Stroganoff

Smokey paprika, strips of beef, thinly sliced onions, mushrooms and soured cream can only mean one thing – and that’s Classic Beef Stroganoff!

Depending on what type of paprika is used in the recipe, it is often disputed whether this dish is Hungarian or Russian. In this Classic Beef Stroganoff recipe, the choice is yours. Hungarian or Russian; it’s the earthiness form this beautiful spice that really makes the dish stand out.

Recipe serves: 4

Prep time: 20 minutes

Cooking time: 30 minutes

Ingredients:

  • 650g beef fillet, cut into 1cm wide strips
  • 60g butter
  • 1-2 Tbsp sunflower oil
  • 2 Tbsp paprika, smoked or unsmoked depending on preference
  • 1 large onion, thinly sliced
  • 300g chestnut mushrooms, thinly sliced
  • 300ml soured cream
  • 1 Tbsp lemon juice
  • Small handful of parsley, finely chopped
  • Salt and freshly ground pepper

Method

  1. Gently melt the butter in a large sauté or frying pan, add the sliced onion and paprika and cook until the onions are soft but not browned
  2. Add in the mushrooms and cook for a few minutes until soft, then transfer the mixture to a plate and set aside
  3. In the same pan, heat the sunflower oil on a very high heat. While the oil is heating, season the sliced fillet steak, then add to the hot pan and cook quickly on all sides until just starting to brown; this should take no more than two minutes. Cook the steak in batches to give the meat enough room in the pan to fry and not boil
  4. Once all the steak has been cooked, remove it from the pan and set aside. Add the onion and mushroom mixture back to the pan and stir in the soured cream. Cook on a medium heat until it starts to thicken slightly, then turn the heat to its lowest setting and return the steak
  5. Continue to cook for 1 minute, then stir in the lemon juice and chopped parsley
  6. Serve with buttery pasta, or rice
