Baked Avocado Eggs with Bacon and Chilli make for the perfect weekend brunch. These little boats of goodness are delicious and nutritious – and what’s more, they will banish any weekend hangover in no time. A real game changer, because once you’ve tried Baked Avocado Eggs with Bacon and Chilli, they will be on your breakfast or brunch menu for life.

Serves: 2

Prep time: 10 minutes

Cooking time: 20-25 minutes

INGREDIENTS:

  • 2 large avocados, halved and stones removed
  • 4 small-medium sized eggs
  • 2 rashers of bacon
  • 1 tsp dried chilli flakes
  • Salt and freshly ground pepper

METHOD:

  1. Preheat the oven to 200c for at least 10 minutes
  2. Take an avocado half and cut away a thin slice of the bottom/outer shell, so that it creates a flat surface and stops the avocado from wobbling. Now scoop out some of the flesh, so that there is enough room for the egg to fit. Repeat until all avocados have been prepared
    TIP: Don’t throw away the avocado flesh. Place the flesh in an airtight container with some lemon juice, then freeze it for a later date and use for guacamole, smashed avocado on toast, or in smoothies
  3. Place the avocado halves on a baking tray and gently crack an egg into each half, season with salt and pepper, then carefully place the tray into the preheated oven for 20-25 minutes, until the egg whites have set, but the yolks are still oozy
  4. While the avocados are baking, grill or pan-fry the bacon until crispy, then chop into small pieces
  5. When the avocados are done, carefully move them onto a serving plate and sprinkle each one with the crispy bacon bits and dried chilli flakes. Serve either on it’s own, or with a side of crunchy toast and grilled tomatoes

If you don’t eat bacon/pork, or don’t enjoy chilli, just leave them off and add your own twist. Try topping with spoonful of cream cheese and chives, or adding grated cheese.
